Some of the best recipes aren’t created from expensive ingredients or complicated techniques. They come from learning how to use ordinary ingredients a little differently.
In this pasta, zucchini and yellow squash are prepared two ways. Half is sliced and cooked until golden around the edges, while the other half is grated and allowed to melt into the sauce. The grated vegetables make the pasta creamy without requiring a heavy cream sauce—and they’re much less noticeable for children who aren’t enthusiastic about squash.
The whole thing is finished with a buttery Parmesan crumble that adds just enough crunch to make an otherwise simple skillet of pasta feel special.

Ingredients
For the pasta
- 12 ounces short pasta, such as rotini, penne, bow ties, or shells
- 1 medium zucchini
- 1 medium yellow squash
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
- 2 cloves garlic, minced
- ½ teaspoon Italian seasoning
- ½ teaspoon salt, plus more for the pasta water
- ¼ teaspoon black pepper
- ½ cup freshly grated Parmesan cheese
- ¾–1 cup reserved pasta water
- 1 teaspoon lemon zest or 1 teaspoon lemon juice, optional
For the Golden Parmesan Crumble
- ½ cup panko breadcrumbs
- 1 tablespoon butter
- 2 tablespoons grated Parmesan cheese
- ¼ teaspoon Italian seasoning
- Small pinch of salt
Before You Begin
Cut half of the zucchini and half of the yellow squash into thin half-moon slices.
Grate the remaining halves using the large holes of a box grater. There is no need to peel them first.
You’ll use the sliced vegetables for color and texture and the grated vegetables to help create the sauce.
Instructions

Make the Parmesan crumble.
Melt 1 tablespoon of butter in a large skillet over medium-low heat. Add the panko breadcrumbs and Italian seasoning. Cook for 3–4 minutes, stirring frequently, until the crumbs are golden. Remove the skillet from the heat and stir in the Parmesan and a small pinch of salt. Transfer the crumble to a bowl and set it aside. Wipe out the skillet if any crumbs remain. -
Cook the pasta.
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until just tender. Before draining, carefully reserve 1 cup of the pasta water. Drain the pasta, but do not rinse it. -
Brown the sliced squash.
While the pasta cooks, heat the olive oil in the same skillet over medium-high heat. Add the sliced zucchini and yellow squash in a mostly even layer. Let them cook undisturbed for 2–3 minutes before stirring. Continue cooking for another 3–4 minutes, until tender with golden edges. Transfer the browned vegetables to a plate. -
Create the hidden squash sauce.
Reduce the heat to medium and add the remaining tablespoon of butter. Add the grated zucchini and squash, garlic, Italian seasoning, salt, and black pepper. Cook for 4–5 minutes, stirring occasionally. The grated vegetables will soften, release their moisture, and almost melt into the skillet. -
Bring everything together.
Add the drained pasta and ½ cup of the reserved pasta water to the skillet. Toss until the pasta is coated. Reduce the heat to low and add the Parmesan a little at a time, stirring between each addition. Add more pasta water as needed until a light, silky sauce forms around the pasta. Stir the browned squash back into the skillet. Add the lemon zest or lemon juice, if using. Taste and adjust the salt and pepper. -
Finish and serve.
Spoon the pasta into bowls and sprinkle the Golden Parmesan Crumble over each serving. Serve immediately with extra Parmesan, if desired.
A Little Fields & Flour Note
The secret to a smooth Parmesan sauce is low heat and pasta water.
If the skillet is too hot when the cheese is added, the Parmesan may clump instead of melting. Turn the heat to low, add the cheese gradually, and keep stirring. The starch in the pasta water helps the butter and cheese come together into a sauce.
If the pasta becomes too thick, it isn’t ruined—just add another splash of warm pasta water.
For Children Who Don’t Like Squash
This recipe already hides half of the vegetables in the sauce, but you can make them even less noticeable.
- Grate all of the zucchini and squash instead of leaving some sliced.
- Peel the vegetables before grating them to remove most of the green and yellow color.
- Cook the grated vegetables for a few extra minutes so they become very soft.
- Blend the cooked squash mixture with a splash of reserved pasta water until smooth, then stir it into the pasta before adding the Parmesan.
Either way, the result is a comforting bowl of pasta with a little extra goodness tucked into the sauce—and a golden, buttery crumble on top.
